Campfire Street Corn (Elote): The Side Dish That Earns Its Own Post 🌽🔥

July is peak sweet corn season and campfire elote — Mexican street corn — is the best possible way to celebrate that. 🌽🔥 It takes about 15 minutes, it costs almost nothing, and everyone at the campsite will be talking about it.
Grill whole ears of corn directly on the camp grate over medium fire — turn them every few minutes for about 10-12 minutes total until the kernels are charred in spots and cooked through. While they're hot, brush generously with mayonnaise (this is not negotiable — trust the process), roll in crumbled cotija or feta cheese, dust with chili powder and smoked paprika, and squeeze fresh lime over the top. Finish with a pinch of salt and chopped cilantro if you've got it.
That's it. Sweet, smoky, creamy, tangy, a little spicy. The corn does all the work — you just have to not skip the mayo.
